    Hope you are having a fabulous weekend friends. I apologize for another long must-reads post; I accumulate waaaay too many good ones, let them pile up before sharing 'em on here. I'm bound to learn my lesson eventually.

    How to accept your changing body

    Getting back into exercising (beyond yoga) has been a goal of mine and my dietician's for my last semester. With under a month left now, I'm not sure how attainable that is so Kylie's thoughts on what she learned from a break from exercise came at the right time.

    Absolutely loved Roxane Gay's book, Hunger, and was excited to hear about the Unruly Bodies series on Medium this month. Here's my favorite one that I've come across so far: The Body on the Other Side of Self-Hatred

    Even as I'm still in it, I know deep down that college was not as amazing as many make it out to be. With graduation looming, however, part of me has been worried that I hit my peak. So I was reassured by Davida's post on her college experience and how they weren't the best years of her life either. On a slightly related note, if you are struggling, please talk to someone; seriously, it was one of the best decisions in college and life to go see a therapist.

    TGIF!!! Sending good vibes your way this weekend. 

    Here are some of the delicious things I enjoyed during the month of March. Pretty random eats if you ask me. With my trip among other things, there was a lot of eating out in the past few weeks, which both my eating disorder and wallet are not the biggest fans of. Obviously, for the former it's an ongoing challenge that I have to learn to deal with. On the spending concerns, one of my goals is to look into getting a budget started. So if you have any tips... 

    • Grabbed lunch with my parents one day, a salad with fried artichokes and goat cheese among other toppings + a chunk of bread. The mixture of creamy, tangy and crunchy fits into the perfect equation for a salad in my book. 
    • This blueberry spelt scone up in New Haven when I was there for Spring Break
    • Celebrated St. Paddy's Day with Irish soda bread and a green shakshuka type dish that I threw together. Basically took greens and Trader Joe's green goddess dressing into a pan, added the eggs and feta cheese.
    • Tried one of the new Siggi's flavors -- mango jalapeño. Not my all-time favorite Siggi's (forever and ever their vanilla) but was pretty good. I love the sweet and spicy combo!

    • No longer the season for it necessarily but this curried sweet potato soup with autumnal goodies--roasted brussels sprouts, pomegranate seeds and toasted pepitas--but seriously one of the best soups I have probably ever tasted. 

    • In that meatless Monday cooking class I took, we made a beet hummus (sans tahini for me 😟) and smashed pea ricotta toast. Gotta love a classic pair like that.
    • Another absolutely amazing meal at Mot Hai Ba, this fancier Vietnamese restaurant, before watching a play with my family. This was their braised beet salad with crispy shallots and coconut cream. Look at that plating!!! 😍😍😍


    • This different blueberry oatmeal where you puree all the ingredients--including the oats--before cooking. An interesting texture. Almost like a muffin but actually enjoyed it and will be doing it again! Found a similar using apples so stay tuned!
    • Made brown butter chocolate oatmeal! Chocolate! For breakfast! Topped with dates and coconut.

    Sadly, not too many pictures this week; all I got for you are these quick tacos I had for dinner one day this week -- beans, roasted turnips, lettuce, radishes, pickled onions and yogurt on corn tortillas.

    Nevertheless, quickly joining Meghan for another Week in Review!

    • Fooled my friends on April 1st! Made them think I was tricking them when I really wasn't. So I guess I reverse April Fool's-d them? I am pretty notorious for getting them (...or at least trying to...) so it was great it actually worked! 
    • Attended another cooking class. This one was Meatless Monday themed with my mama! 
    • Saw Say Anything! Honestly haven't seen too many classic movies but definitely want to see more. Any recommendations? 
    • Did yoga outdoors, which becomes much much harder when you can't breathe through your nose. 😩 Thank you seasonal allergies. 
    • Went to a vegan market pop-up shop. 
    • Ran laundry and changed my sheets. Not sure if i've mentioned this but putting sheets on my bed is one of the chores I detest the most. As a side note, even after watching numerous videos on it, I still can't fold a fitted sheet. 🙈
    • Made a wax appointment! And a doctor's appointment! And scheduled my upcoming therapy sessions for the month. 
    • Watched Waitress with my family -- absolutely in love with the soundtrack! Especially this song and this song. 
    • Got outside! Took a walk to a nearby park while listening to an episode of Invisibilia. Knew I needed a break and was starting to feel cooped up in my apartment. 
    • All the while, attempted to prepare for my next CPA test tomorrow, which I am procrastinating even further by writing this but what's new.  So hopefully this explains why I'll have to cut it relatively short here!!
