    TGIF!!! Sending good vibes your way this weekend. 

    Here are some of the delicious things I enjoyed during the month of March. Pretty random eats if you ask me. With my trip among other things, there was a lot of eating out in the past few weeks, which both my eating disorder and wallet are not the biggest fans of. Obviously, for the former it's an ongoing challenge that I have to learn to deal with. On the spending concerns, one of my goals is to look into getting a budget started. So if you have any tips... 

    • Grabbed lunch with my parents one day, a salad with fried artichokes and goat cheese among other toppings + a chunk of bread. The mixture of creamy, tangy and crunchy fits into the perfect equation for a salad in my book. 
    • This blueberry spelt scone up in New Haven when I was there for Spring Break
    • Celebrated St. Paddy's Day with Irish soda bread and a green shakshuka type dish that I threw together. Basically took greens and Trader Joe's green goddess dressing into a pan, added the eggs and feta cheese.
    • Tried one of the new Siggi's flavors -- mango jalapeño. Not my all-time favorite Siggi's (forever and ever their vanilla) but was pretty good. I love the sweet and spicy combo!

    • No longer the season for it necessarily but this curried sweet potato soup with autumnal goodies--roasted brussels sprouts, pomegranate seeds and toasted pepitas--but seriously one of the best soups I have probably ever tasted. 

    • In that meatless Monday cooking class I took, we made a beet hummus (sans tahini for me 😟) and smashed pea ricotta toast. Gotta love a classic pair like that.
    • Another absolutely amazing meal at Mot Hai Ba, this fancier Vietnamese restaurant, before watching a play with my family. This was their braised beet salad with crispy shallots and coconut cream. Look at that plating!!! 😍😍😍


    • This different blueberry oatmeal where you puree all the ingredients--including the oats--before cooking. An interesting texture. Almost like a muffin but actually enjoyed it and will be doing it again! Found a similar using apples so stay tuned!
    • Made brown butter chocolate oatmeal! Chocolate! For breakfast! Topped with dates and coconut.

    Hi there. Long time no talk! It's been a hot second (only in the metaphorical sense because it was freezing where I was!) since my last post. This Monday morning I'll be recapping my trip to the Northeast I took over spring break. Please bear with me though as it isn't your traditional Week in Review since I'll be going through a Friday-Wednesday and not an actual week. Also sending a huge belated happy birthday to The Queen of the Lists, Meghan! Hope this next year is filled with more wine, cat snuggles, and cute pictures of the kiddo. 🎂


    I got back to Texas last Wednesday and was pleasantly welcomed by the warmer, sunshine-y weather. Oh so ready for spring to be official! If you live somewhere where winter actually is a thing, I don't know how y'all handle it. Mad props to ya. 

    In case I haven't said this, my trip was to visit some family friends who I have known for what we calculated is coming up on 15 years now. CRAZY. Even crazier to see how adult we've become in terms of our conversation topics but it's also comforting to know that I can still be my kid-at-heart around them. I flew into Boston Friday morning and spent the first two days there. And...
    • Enjoyed a bagel for breakfast three days in a row -- something that in the past would've made me incredibly anxious. It's weird to taste (figuratively and literally) recovery like this. It's been a long time coming and I finally feel things are going somewhere. 
    • Went to both the Institute of Contemporary Art and the Museum of Fine Arts. One of my fave things to do in a new city!! 
    • Walked around the Harvard campus and surrounding town but sadly couldn't get into any of the academic buildings because they were locked up for the break
    • Got a free cup of Starbucks coffee at said Harvard Yard 
    • "Trekked" 2/3 of the Freedom Trail. For all you history buffs out there, it featured sites like Boston Massacre spot and Paul Revere's house



    Sunday night my friends and I drove over to the Amherst, Massachusetts area. My friend just started up at a nearby college there. So I spent a day around her campus where we...
    • Grabbed breakfast at the university dining hall. Loved all the vegan friendly options they had to offer! I got a tofu scramble with pico de gallo + oatmeal topped with dried fruit, nuts and strawberries. Sweet and savory for life. 
    • Bleached and dyed my friend's hair
    • Toured around a little bit and saw the theater and greenhouse.
    • Finally watched Black Panther! Made even better since we were the only ones in the theater. 😅
    • After eventful plan changes, a couple of bus rides, a late-night dinner, some lugging our suitcases around another college town, we sought warmth and 'camped out' for a couple of hours at a random academic building until my other friend could pick us up


    Then late Monday night (almost Tuesday morning) we left for New Haven, Connecticut. Fun fact! I was born in Bristol but have no memory of Connecticut so for the first time . Stayed there until Wednesday morning when I took the bus back out to Boston to catch my flight in the early evening. During those last couple of days, I...
    • Experienced my first legit winter storm of sorts. Incredibly beautiful but I couldn't feel my fingers. 😳
    • Walked around the Yale campus in said storm
    • Made it to the Yale Center for British Art and Yale Art Gallery right before closing. Had to powerwalk through a lot of it, which isn't something I like to do, but better than nothing!
    • Binge-watched Marvelous Mrs. Maisel on Netflix with my friend! Highly recommend especially if you are a Gilmore Girls fan. 
    • Celebrated pi day with everything but your traditional pie -- pizza for lunch, quiche for dinner and an apple pie bar for dessert





    I knew I wanted to spend my last spring break somewhere other than at home--to give myself a real break. Though maybe a day too long, I'm glad I did it. Hopefully it'll give me the motivation, the restart to get back into the focused studying that I need for this next half of the semester.

    Houston

    Happy Monday-post-Thanksgiving. Long time no talk. Hope you all enjoyed the holiday weekend, relaxed and spent time with loved ones, whether be it family, friends or furry creatures. Today's WIR will be in the form of with accomplishments snuck in there.


    • First of all, for Meghan, this amazing link-up, and the rest of the blogging community 
    • That my school gives us an entire week off for Thanksgiving break so I could visit a friend in Houston and explore the city
    • For my car, which took me on my first solo road trip ✔️
    • For my friend who let me into her life for the weekend
    • For my eyes to take in breathtaking skies & sights like these



    • For the time to give back and volunteer at the food bank in order for others to have a Thanksgiving meal too 
    • That I share my love for food with my family. My contributions to this year's feast were a cranberry relish and pumpkin creme brulee
    • For the ability to eat beyond fullness, sit with the uncomfortable, move on with life, and digest said foods 
    • For Black Friday shopping that wasn't too crazy but where I was still able to get some holiday gifts crossed off the list
    • For the ability to move my body during yoga classes 
    • That Nickelodeon made a Hey Arnold movie (....even if it was almost 15 years later) 

    • For having a mom that is willing to and does make cinnamon rolls for breakfast ☺️  Oh so satisfying
    • In a weird way, that I have the stresses I do in life--school, recovery, etc. A reminder to put things in perspective as life can be so much worse. 
    • And finally for Harry Potter movies that accompanied me while I finished up the first draft of a paper for class. With only three weeks left for the semester, it's downhill from here!

    I created my own long weekend in New York City by switching shifts with one of my coworkers last Friday to have the entire day off. Before I get started reviewing (c/o Meghan) my time in the Big Apple though, I want to take this time to send my thoughts and love to all those affected in the shooting in Las Vegas last night. It's unbelievable for me to think that just a couple of months ago I was there in Vegas. A sad reminder that crazy things can happen anywhere and to anyone.


    After an exam on Thursday afternoon, I left for New York at 7ish, an hour past my supposed departure time. Got into the city 3.5 hours and a timezone jump later where one my bestest high school friends, who I also crashed with, was waiting to pick me up. She just moved to the city last month all the way from Manila.

    Started the morning much later than my usual 7:00am (my friend is basically the complete opposite of me). Convinced her to try bagels for a super late breakfast at Black Seed where I got the vegan buffalo cauliflower. It was filled with a tofu cream cheese and was de-freaking-licious.


    We then wandered around downtown, seeing the Oculus, Freedom Tower, the 9/11 Memorial then made our way toward Battery Park. On Friday we also hit up MoMA for their free admission afternoon. My friend took me out that evening (again the complete opposite of me) to a couple of bars where I sipped a moscow mule to ring in my 22nd birthday on Saturday. 



    On Saturday, one of other besties from high school was headed into the city for a few days too. Before meeting up with her, however, we went to Central Park and dog and people watched, then explored about 1/3 of The Met. Seriously so much to see in just an afternoon so we selected our priorities; mine were the 19th and 20th century (think Monets, Van Goghs) + my personal favorite art movement, the modern/contemporary pieces.




    We then met up with said friend and her boyfriend in Smorg Square, an outdoor food park in Lower Manhattan. More than a tad chilly for my taste but luckily did not get rained on though the forecast predicted otherwise! Walked along The High Line for the views until we ended up in Chelsea Market, where we grabbed something to eat before heading out to another rooftop bar. This time I tried a frose (am I basic yet?). It was meh but THE VIEW WAS AMAZING.

    We dedicated our last day to exploring Brooklyn. The four of us took the Manhattan subway and rode over the river together. On our schedule there: brunch turned an early linner at Egg in Williamsburg, a quick ferry to Dumbo, plus a whole bunch of walking around the fun Brooklyn streets and stores.

    Another one of my friends had recommended I try this place called Juliana's pizza but the wait was an hour long. Didn't have the patience for that so instead grabbed dinner at Artichoke Pizza, known for their huge, creamy spinach and artichoke, white pizza slices. 


    Split off from my friend and her boyfriend for a bit since they had a concert to attend. The turned New Yorker friend and I then walked across the Brooklyn Bridge, another unforgettable and unfathomable experience. I'm still in awe of the sheer history behind the bridge. Made our way back into Manhattan where we stopped for Ben's Cookies and at Strand. We walked around the Upper West Side and stumbled across Lincoln Center, Juilliard and the Empire Hotel (my inner Gossip Girl fan was so happy) while waiting for my other friend to return so we could say our goodbyes. 



    Because I make poor life choices, I took the 6:00am flight out and back into Dallas to make it back in time for my 11:30 class. So exhausted that I succumbed to having caffeine in the form of a chai latte despite disliking how it makes me feel all jittery. Even with the extra kick and getting some rest on the plane, I could not for the life of me focus in class. Another accomplishment was taking a quick mid-afternoon nap before it was time to really go back to reality. 

    Peace out to the city that never sleeps

    Although it wasn't my first time in New York City, it was my first time there as an adult and sans family, which makes a huge difference. 100% recommend travelling by yourself even if you start off small by going to a new part of your own city. 

    Unfortunately, there was a lot of walking and surprisingly not enough eating on this trip. Definitely a challenge for my recovery. It was a long and packed weekend. I never slept before midnight. My feet and back and legs ached every night. I barely thought about school. A good reminder that there is more to life than food, than to having everything planned out, than to playing things safe. It was a challenge for me to take a step back, to let go of control, and be more flexible and spontaneous. I was pushed out of my comfort zone but I think that's what friends are and growing older is for.

    ...apparently doesn't stay in Vegas. 😉


    Last weekend I was in Vegas for an honors society conference. Yes, you read that correctly. Vegas. An honors society conference. It was my first time there and thought it would be fun to do a recap on the blog.

    Friday:

    I arrived in Vegas at 11-ish Thursday evening (1:00 am Dallas time 😭  so technically Friday already). My friend and I, who were on the same flight together, met up with two other members of our org also arriving around that time. After much confusion navigating the airport then an Uber ride, we made it to the hotel room's door two hours later (3:00 am Dallas time). This was definitely too late for Granny Kaylee. 

    We were then up the next day at 7:00 in order to be at the conference, which was at a different hotel, another Uber trip away, at 8:30. The day was spent attending various workshops and talks. They had a good variety of workshop types so I surprisingly found myself enjoying the workshops more than I thought I would. My favorite would have to be the first one I attended: Out of the Box. Essentially, the speaker discussed how our 'box'--whether that be preconceived notions, boundaries, pasts, fears, or whatever other baggage we carry--can trap us, can make us feel stuck. We have to recognize and realize that though it may seem there's no way out, our boxes are actually lid-less; we have to shift our thinking and find or create a new path. Upward & onward friends. 

    Luckily down time was factored into our schedules. We got off at 4 and a few of my friends and fellow members wandered around. Our first stop was the pawn shop featured and showcased in the show Pawn Stars. Since we were already in the area, we walked around downtown Vegas, observed the many, err, interesting street performers and artists, and grabbed pizza for dinner. We were famished and it totally hit the spot. 




    We then headed back to the Strip, the main part of Vegas, and did some hotel hopping. Our main stop The Bellagio to watch the fountains' evening light show. We also hit up Caesar's palace gambling games like blackjack, poker and the slot machines. All virtual though; no tables for us! I put only $7 in and lost $6.50 if that tells you anything about my skill/luck. Finally, we impromptu decided to go on the High Roller ferris wheel (Thank god not the roller coaster). A tad expensive for my liking but the view + the company + the overall experience made it worth it. Subsequently crashed back at our hotel rooms at around 1:00.

    Saturday:

    The second day was also a relatively early start. A couple more workshops then we had time off again at for the afternoon. Continued hotel hopping along the Strip since we wanted to stay closer to the conference location since there was still a gala to attend in the evening. 


    Only in Vegas can one go to Paris, Italy (twice i.e. two diff hotels), Rome, and Egypt, see flamingos and a pirate ship, among other things, in just days. The hotels in clockwise order: The Venetian, Treasure Island, The Bellagio, Flamingo, Paris, Cosmopolitan, and The Luxor. These were SO cool. My two favorites were the Luxor with its diagonal elevator & Venetian with blue "skies" and legit gondolas to ride.

    We were treated to a three course meal then as a group we were recognized as one of the key chapters for the year. This was also the closing ceremony for the conference so the keynote speaker gave his presentation. Something he said spoke to my soul:
    As human beings, we don't learn from perfection; we can only learn from imperfection. 
    A not-so-impressive view from the room but thankful for a view nonetheless
    Sunday:

    Though the conference itself ended on Saturday, I decided to leave on Sunday and give myself more time to explore the city alone. First stop was Christina Tosi's Milkbar of course! Got a few cookies to take home with me including the oh-so-famous corn one. 


    After grabbing that freekeh bowl for brunch, I continued walking the streets of downtown LV. I randomly came across this bookstore, Writer's Block (that name!). Such a neat store with things like a pet rabbit named Baron, artificial bird adoptions, a bear that gives you haikus for 25c., walls lined with the history of publishing. It hosts book club meetings and writers' workshops in the back room too. Def need more stores like this around the world. To think I almost didn't go in. 





    Then I walked around Container Park and perused the various shops there. One of the park's famous features is a giant mantis, which supposedly breathes fire at night. Before riding over to the airport, I grabbed a snack at this vegan restaurant, Vegenation. I chose the raw carrot cake slice which had a lemon cashew frosting (uhhh, yes please!!!) 




    My flight was at 4:00 in the afternoon with a layover in LA, which seems very counterproductive to go further west then back east but who knows how airlines think... Because of the stop though, it was another long day. I landed in Dallas at midnight (central time). Super grateful for my mom who brought me and picked me up from the airport. 

    My overall thoughts/observations on the trip & Vegas:
    • Uber/Lyft/ridesharing = main form of transportation. They actually have a pretty cool system in place with designated spots for rideshare pick-ups at each hotel. I hadn't seen anything like it! As much as I enjoyed my random conversations with drivers, it did get a tad pricey. Even when my friends and I split the costs, it adds up for sure. So make sure to take advantage of the promos! 
    • For all you vegans out there or those like me who just like to try vegan food, I realized it was a lot more vegan friendly than I thought it would be. Not necessarily entirely vegan restaurants but a lot of places had plenty of options that were. 
    • Travelling with a lot of people is rough. Supposedly I had already missed some drama that went down on Thursday evening but even so there were just too many people wanting to all do different things trying to coordinate as a group. So glad I spent the extra day there to get in things I personally wanted to do that others may not. 
    • If you aren't big into gambling, drinking or paying to watch shows, I felt that there isn't much else to do especially if you don't plan in advance. Many of the museums required we book tours and shows just did not fit in our budgets or schedules. If I were to go back,
