    Forgive me for skipping out on the weekly reviews lately. I've been taking in the last weeks of classes and consequently have become overly sentimental. It's finally hitting me that I'm graduating. That I will never be in this same place with the same people ever again. To make up for the lack of WIRs, here's another recap of the past three weeks!! 

    • Visited the OBGYN..
    • ....where i may or may not have almost passed out after getting blood drawn 😶
    • Faced my fear and watched a scary movie: A Quiet Place; not as bad as I thought it'd be!
    • Also saw The Greatest Showman with my friend.
    • Made this super dee duper easy vegan cobbler served with strawberry ice cream for additional deliciousness.

    • Met with the dietician I've been working with for 3 years--since the beginning of my recovery--for the final time. Definitely bittersweet but it was nice to reflect on how far I've come since then.
    • Because of that, also reached out to new ones and actually already saw one last week.
    • Took my last tests on this campus! WHAAAT??!!? 😩
    • Prepped my stuff for graduation this week, gown and all.
    • After years, finally went to the eye doctor again!
    • Got a haircut a week ago. Still don't know how I feel about it; wish it were an inch or so longer as it's not sitting the way I want it to. 
    • Had the pleasure of seeing Les Miserables live! As one of if not the first musicals I listened to, it was absolutely breathtaking. 
    • Watched the new Avengers movie. No spoilers from me I promise!! Though in case you need a refresher on the past 18 movies, check out this informative and interactive article. 

    • Baked and distributed chocolate chip coconut cookies for my teachers as a token of my appreciation.
    • Had last days of classes as well as the last shift as a tutor, where my last tutee gave me a brownie! What a nice end to things. 
    • Finished three books!
    • Enjoyed the remainder of the time on campus by eating meals or studying at my usual spots, walking more slowly, and taking pictures. 
    • Posted on ze blog two times with my April food post and random thoughts on how i'm feeling about life at the moment if you'd like to give 'em a read. 
    • Actually took my 3rd (of 4!) CPA exams just this morning. And now it's time for a power nap before getting back to it. 😴

    Linking up for a quick session of Thinking Out Loud

    Aside from the weeks in review, random must-reads or monthly food recaps, I've been pretty silent on here. I've found that I'm less introspective when life is going well; less in touch with my feelings. Now things in all aspects--mentally, socially, physically, emotionally--seem to be on high note.  I don't know what to make of it. But perhaps this is simply what contentedness feels like. It's really odd feeling this way; I'm not accustomed to it. So I still worry. Still overthink. The way I describe it is that I'm waiting for the floor to give out from underneath me, which isn't a great way to live either. I have been trying to actively challenge this. To accept things as they may come and trust that I have it in me to cope with whatever comes my way, good or bad.
    "Now and then it's good to pause in our pursuit of happiness and just be happy." 

    Along the lines of things going well... part of me also feels bad when I don't have much to talk about in therapy sessions because there is nothing I really have to process. I actually brought this up to my therapist about this recently and she tried to provide an analogy to understand it. Early on in recovery, my support system was likely to check in with me pretty constantly: if I was eating enough and regularly, how my appointments went, etc. Then as I progressed, it became less needed. Similarly, from a mental perspective, when things are going well maybe I am not as introspective as I was because I don't necessarily need to be.

    Hmm, that's about it from me. Here's to making it to (almost) the end of the week!!

    Hello...May!!??! Seriously, where is 2018 going. It seems like only yesterday I was reflecting on the past year. And yet the flowers have bloomed. The air is warmer. The shorts have come out as have the spring produce and al fresco meals. 

    I realized that I missed slipping in this caveat in last month's recent eats. Just as a reminder, this isn't a complete look at my daily meals. Nor does it imply what you should/should not eat. You know your body better than I do. So find what works for you and keep on learning what you like/dislike and satisfies your tummy and your tastebuds. Also, I want to be transparent as possible and will let y'all know how much of the something I ate, if I split it, etc. 


    Tacos tacos and more tacos! Eggs + cheese + avocado crema + roasted cabbage. And on the right carrot BBQ tofu tacos using that date BBQ sauce referenced here. There were also quite a few that went unpictured--black bean breakfast taco eaten alongside pozole, a delicious salmon one with an absolutely perfect portioning of fish, kimchi and egg tacos to name some more. 


    This delicious Mother Earth bowl from Flowerchild. Grains, sweet potato, mushrooms, sliced avocado, onions, arugula, homemade pesto. Yum. 


    Before another allergic reaction hit, split two kinds of socca. Not quite sure what exactly it was. The only thing I can resume is chickpeas ☹️ which is really odd because I've eaten them in the past few months. Ended up leaving quite a bit of the socca itself left over because it was still partially raw inside. We did finish the toppings and they were absolutely delicious; one was prosciutto, fresh mozzarella and arugula and the other was chicken, artichokes, grapes, goat cheese and greens.  


    My tastebuds are ready for ice cream season! Can literally taste summer. Split this strawberries and cream + snickerdoodle ice cream sammie. 


    A simple snack of toast with sunbutter + strawberry chia jam -- see this post for the jam.  


    Apparently I have a thing for pecan studded muffins as on 2 separate occasions I went to different coffeeshops and got similar muffins. Put a little bit of reading (for fun and for school) in. It's weird to think that with these being my last days as student, I won't be able to do this as often in the future. 😶
