Happy April 16th! Hope tax season isn't giving you too much stress right now. That half a month since my last Week in Review sure flew by. Here's some of what I've been up to in the past couple of weeks:
- Petting puppies at the animal shelter
- Test taking! My CPA pt 2 is done! Felt alright about it but honestly I can't overthink too much since we don't find out our scores until the end of June. Three. Months. Away...hmm I still haven't decided if this is a good or bad thing.
- Posting on the blog a bit: recent eats and reads
- Having productive mornings like the one last Friday where I got waxed, ran another quick errand at the store and treated myself a doughnut breakfast all before the 10:00 AM class time
- Letter writing. I attended a workshop last weekend where they provided everything one needs to send a letter--stamps, envelopes, typewriters, etc. There was even a calligraphist present to address the envelopes. I may have gotten super, super excited and sent out more letters than originally intended. 😅 My bad. But the more the merrier since how often does one send/receive handwritten notes in this day and age?
- Ice cream eating! This week's challenge with my dietician is to have some every week day for a week, which I am proud to say I am 3/3 for so far. Plus, got one at Ben & Jerry's free cone day.
- Crossing items off my to-do-before-leaving-school bucket list. It is finally hitting me that I'll be graduating in approximately 3 weeks and it would be an understatement to say that the sentimentality has kicked in. 😢 May write more about this as it gets even closer...
- Getting busy in the kitchen again. After my test I had basically a full week off of classes, which meant I had a lot of free time on my hands; specifically enjoyed...
- This naturally sweetened BBQ sauce from The First Mess. Truth be told I totally did not expect it to taste THIS good, taste like an actual BBQ sauce. Definitely pleasantly surprised.
- Raw chocolate coconut date bars or in my case brownies shape-wise
- Naturally Ella's strawberry chia jam. Yay for summer produce season soon approaching!!
- A sprinter (spring + winter) recipe for bean and dumpling soup, which came together much faster than expected. I used kidney instead of white beans and a buttload of rosemary I had for the herbs, and went the mustard route rather than pesto. T'was perfect for this back and forth weather. Trust me this picture does not do its tastiness justice.
